  • Prepare your ingredients by measuring and gathering everything. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a large mixing bowl, whisk together the shredded zucchini, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  • Sift together the flour, baking soda, baking powder, salt, cinnamon, and any optional spices in a separate bowl.
  • Slowly add the dry ingredient mixture to the wet ingredients, mixing just until combined.
  • Gently fold in the fresh blueberries with a spatula.
